Proosdij Cheese – Smooth, Sweet & Characterful

Proosdij is a Dutch cheese made from pasteurised cow’s milk and matured for around 28 weeks, giving it a beautifully balanced character. The texture remains smooth and easy to slice, while the flavour develops into something more expressive.

You’ll notice a gentle sweetness with a subtle nutty undertone, combined with a light, slightly tangy edge that makes the cheese feel lively without becoming too strong. It’s a cheese that sits perfectly between mild and mature — approachable, yet full of flavour.

With its 45+ composition, Proosdij is slightly lower in fat than traditional 48+ cheeses, while still offering a full, rounded taste. Naturally lactose-free, it is also easy to digest, making it a comfortable choice for everyday enjoyment.

This cheese works effortlessly in different moments — ideal on a sandwich, but especially enjoyable on a cheese board. Pair it with cured meats, roasted nuts or a chutney to bring out its sweet and savoury notes. It also melts well, making it suitable for warm dishes such as toasties or gratins.

Rind: plastic coating with preservative natamycin (not suitable for consumption).
